Recipe: ‘Pumpkin Mousse Trifle’ from Epcot’s 2011 Food and Wine Festival

Although I must confess to not having tried it myself this past year at the Epcot International Food and Wine Festival at the Walt Disney World Resort, it was impossible for me to ignore the constant raves regarding the pumpkin mousse available at the American Adventure pavilion.

Although I didn’t read it before it was apparently deleted, a tweet from @WaltDisneyWorld leads me to believe that the recipe for the pumpkin mousse was published online, if but for a short time. Thus I am pleased to be able to bring you the official recipe from Walt Disney Parks and Resorts as relayed via a press release from Ocean Spray, one of the event’s sponsors.

Note however that the recipe comes with the warning that it has been sized down proportionally from the kitchen sized proportions required by the Epcot theme park, so ‘flavor profile may vary.’

Pumpkin Mousse Trifle with Cranberries and Apricot-Orange Sauce

Ingredients:

  • 1 store-bought spice cake mix, prepared per package directions and cooled
  • 1/3 cup plus 2 tablespoons old-fashioned oats
  • 1/4 cup plus 2 tablespoons flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 5 tablespoons butter, melted
  • 1/2 cup apricot jam
  • 1/4 cup orange juice
  • 1 egg yolk (or 1/4 cup pasteurized egg yolks)
  • 3/4 cup canned pumpkin pie filling
  • 3/4 cup white chocolate chips
  • 1 cup heavy cream
  • 1/2 cup Ocean Spray® Craisins® Original Dried Cranberries , plus extra as garnish

Directions:
Prepare cake as following package directions. Cool completely. Cut into cubes and set aside.

To make streusel:
Preheat oven to 325°F. Line a sheet pan with foil; set aside.

Combine oats, flour, brown sugar and sugar in a medium bowl. Add melted butter and stir until mixture is crumbly. Pour onto prepared sheet pan

Bake 15 to 20 minutes, or until golden brown. Set aside to cool; crumble into small pieces. Set aside.

To make apricot-orange sauce:
Combine apricot jam and orange juice in a medium mixing bowl. Whisk together until smooth. Set aside.

To make pumpkin mousse:
Combine egg yolk and pumpkin pie filling in a medium mixing bowl.

Place white chocolate chips in a microwave safe bowl. Microwave on HIGH for 2 minutes or until melted and smooth, stopping every 30 seconds to stir. Stir melted white chocolate into pumpkin mixture.

Using an electric mixer on high speed, whip cream in a medium mixing bowl until stiff peaks form. Gently fold whipped cream into pumpkin mixture.

To assemble trifle:
Place a dollop of mousse at the bottom of a serving dish. Top with Craisins® dried cranberries and a drizzle of sauce. Place a few cubes of cake over mousse. Top with another layer of mousse, Craisins® and sauce, then top with streusel. Garnish with a few Craisins® on top.

Makes 6-8 servings.

Duffy the Disney Bear Anniversary Book Release and Passholder Gift Event

On Friday, October 14, both the Walt Disney World and Disneyland Resorts will be commemorating one year of Duffy the Disney Bear being in the parks with a book release, signing and a special gift for Annual Passholders.

At Walt Disney World, Disney Design Group artist Monty Maldovan will be on-hand at Disney’s Traders in Epcot near the entrance to World Showcase to sign copies of the new book from 11 am to 1 pm.

As a bonus gift, the first 750 Annual Passholders who present their AP to cast members at Disney’s Traders in Epcot and the first 250 Annual Passholders to present their APs at Treasures in Paradise at Disney California Adventure when the shops open will receive a limited edition tshirt designed for the 17″ Duffy plush.

Duffy will also be available to meet and greet with guests in his pumpkin outfit.

2011 Food and Wine Festival Offers Mobile WebApp, Gowalla Stamps

Although the actual URL is pretty hefty, for the benefit of those without a QR decoder app, we are offering http://626.sk/food which will direct you to the mobile site.

Once you reach the mobile site / webapp, you’ll have the opportunity to explore Food and Wine events (including availability), Eat to the Beat concert information, pavilion information and more as well as the ability to mark favorites, share items and even add items to the calendar. The site is designed primarily for use on an Apple iOS device such as an iPhone, but it does work to varying degrees on other devices such as Android devices, although functionality may be limited.

The official Food and Wine Festival Facebook page has added the ‘Festival Tidbits‘ app which provides an interactive map of all the food offerings at the festival with the ability to share with friends. You can also add ‘passport stamps’ to your timeline to show off where you’ve been at the festival and Disney has announced that it will expand on its Gowalla partnership by offering Food and Wine Festival passport stamps.

Wine and Dine Half Marathon ‘Finish Line Party’ to Feature Attractions and New Food Offerings for First Time

A capacity field of runners will experience new food and wine options as well as have exclusive access to signature Disney attractions for the first time at the Disney Wine and Dine Half Marathon Weekend, Sept. 29-Oct. 2, at Walt Disney World Resort, further enhancing an event affectionately known as the “ultimate runners night out.”

At the post-race Finish Line Party at Epcot that lasts until 3 a.m., several Epcot attractions will be operating, including Soarin’, Test Track and Mission: Space. Also, there will more than 20 new food and beverage kiosks, bringing the total number to nearly 90, as well as live video feeds of the race on giant monitors.

The new food and entertainment enhancements are designed to further heighten the runner experience and build on the race’s instant popularity. This year, more than 12,500 runners – nearly 2,000 more than last year’s inaugural race – are expected to take part in the unique experience of running through Walt Disney World theme parks at night. The 13.1-mile trek starts at 10 p.m. at ESPN Wide World of Sports Complex and takes runners through Disney’s Animal Kingdom and Disney’s Hollywood Studios before finishing at Epcot during the Epcot International Food & Wine Festival. The event features a relay option which gives runners the opportunity to team up with a partner and each run the course in 4.8-mile and 8.3-mile intervals. Everyone who completes the race receives a finishers’ medal.

Defending champions Anton Van Zyl from Ft. Lauderdale, FL., and Melissa Wisner from Washington, D.C., return, leading a field of runners from all 50 states and 21 countries.

Fans can purchase tickets to the post-race party at Epcot at www.runDisney.com or at the event’s Health and Fitness Expo at ESPN Wide World of Sports Complex.

In addition to the race and Finish Line Party, the weekend features the Disney Halloween 5K at Disney’s Animal Kingdom and Kids’ Races at ESPN Wide World of Sports Complex, both on Saturday. The Health and Fitness Expo takes place Sept. 30-Oct. 1 inside the Jostens Center at ESPN Wide World of Sports Complex. The expo features the latest in running equipment, products and apparel as well as seminars from running experts – including runDisney training consultant Jeff Galloway.

‘Cars 2′ Disney/Pixar Weekend at Epcot Event Map Now Available

'Cars 2' merchandise exclusive to Disney ParksWalt Disney World has released the official special event park map for the Disney/Pixar Weekend taking place this Friday through Sunday, May 13-15, as part of the final weekend of the Epcot International Flower and Garden Festival.

The map, which you can download here as a PDF, offers meet and greet times and locations as well as other special opportunities taking place during the weekend.

In addition, the event map announces that Cars 2 merchandise, exclusive to the theme parks, will be available for purchase at MouseGear, Test Tracks and Pin Central.

Details Announced for ‘Car Masters Weekend’ at Walt Disney World’s Downtown Disney

Walt Disney World has released additional details for what they are calling ‘Car Masters Weekend’ at Downtown Disney West Side at the Walt Disney World Resort from May 13-15, 2011 as part of the Disney/Pixar Weekend. The event, which we first announced in early April coincides with the Walt Disney World stop of the State Farm ‘Agents on a Mission’ Tour.

Activities at Downtown Disney are scheduled to run all three days from 10:30 am through 6:00 pm and will include the following:

  • Muscle cars will line the Downtown Disney promenade alongside the largest life-sized, radio-controlled replica cars ever built — which bring their big-screen “car-acter” counterparts to life for fans to meet face to face.
  • Pixar Animation Studios’ “Cars” Franchise Guardian and resident car expert, Jay Ward, has been tapped to judge the Classic Car show which takes place on Saturday and Sunday.
  • NASCAR fans can get a peek at Richard Petty’s racecar on display inside RIDEMAKERZ at Downtown Disney.
  • The family-friendly weekend will feature special Disney-Pixar “Cars 2″ merchandise –including new RIDEMAKERZ models — and bonus entertainment.
  • The 2006 Disney-Pixar Cars film returns to the big screen with a limited engagement viewing at AMC Pleasure Island 24 Theatres throughout the weekend. Moviegoers can even catch a glimpse of the new movie trailer from Cars 2, which gets the “green flag” on June 24, 2011, presented in Disney Digital 3D™ and IMAX 3D® in select theaters.
  • State Farm brings Disney-Pixar’s Cars 2 adventure directly to fans with the “Agents on a Mission” tour, showcasing cars modeled after their big-screen likenesses. Guests can check out the cars and take part in a variety of “Cars 2″-themed activities, including a video kiosk, e-photo opportunities, games and giveaways. They can also enter the “Agents on a Mission” sweepstakes, which features 18,000 prizes, including a new car.

BREAKING: Walt Disney World to Offer Reserved Seating at Disney/Pixar Weekend Talks; Sign-Up Form Linked

Disney/Pixar Weekend at EpcotContinuing our unparalleled coverage of the special Disney/Pixar Weekend taking place at Walt Disney World, May 13-15, we have learned that reserved seating at the special ‘Presenting Pixar’ talks featuring Cars property guardian Jay Ward, Pixar producer Jonas Rivera and composer Michael Giacchino, will be made available as seating is extremely limited at these events (approximately 800 guests per show according to our sources).

The sign-up form, which can be found here, also reveals the titles of each of the sessions that take place on May 14 & 15 only at the World Showplace located in Epcot’s World Showcase between the Canada and UK pavilions.

The schedule and title of the presentations for both days is as follows:

  • Noon – Jay Ward: “Cars 101 – Inspiration for all of the CARacters you know and love”
  • 2 p.m. – Jonas Rivera: “Pixar: Celebrating 25 Years of Animation”
  • 4 p.m. – Michael Giacchino: “Behind the Music: A Score is Born”

CONFIRMED: Disney/Pixar Weekend Event at Epcot, May 13-15

Disney/Pixar Weekend at EpcotVia the official Disney Parks blog, Walt Disney World has confirmed Stitch Kingdom’s original report on the gala celebration in honor of Pixar’s 25th Anniversary and the release of Cars 2 during the final weekend of Epcot’s International Flower & Garden Festival.

The official announcement does make note of a few differences, however, namely that many character greetings will take place inside the World Showplace and around the World Showcase, but not in the Future World area.

Although we did report there would be informal talks held on site focusing on Pixar Animation Studios, Disney has confirmed appearances by composer Michael Giacchino, producer Jonas Rivera and Jay Ward, the Cars franchise guardian on May 14 & 15 only with times and dates to be announced.

Those who are concerned about the wealth of detail we provided earlier that was not confirmed by Disney should take heart in that the announcement completely neglected the ‘Agents on a Mission’ tour stop and that there is plenty more in store that Disney does not apparently want to share at this time. But of course, as always, everything is subject to change.

UPDATE #1: Walt Disney World has created a website for the event at PixarWeekend.com. Although Future World meet & greets are mentioned, Wall-E has been left off the list, signifying he may not be appearing afterall.

In addition, while the Disney parks blog and the official press release indicated the talks would only take place on the 14 & 15, the new site suggests they will take place each day (but do not count on the 13th at this point) and offers the following schedule:

  • Noon: Jay Ward
  • 2:00 PM: Jonas Rivera
  • 4:00 PM: Michael Giacchino
  • 6:00 PM: Special Presentation by Jay Ward, Jonas Rivera and Michael Giacchino

Update #2: We have been assured that while Wall-E cannot officially be confirmed, Disney Parks is working to try to bring him in but since the details haven’t been finalized, they can’t promote his appearance in good faith.

Update #3: Leaking additional information slowly, the Disney Parks blog now mentions the ‘Agents on a Mission Tour,’ albeit not in so many words. They also confirm participation by RIDEMAKERZ and AMC Theaters as we first mentioned. The theater will be showing Cars all weekend while RIDEMAKERZ will be offering some of its new Cars 2 line which we have already previewed here.
