Being diagnosed with a gluten intolerance or just knowing yourself that some food types are simply out of bounds due to the discomfort it causes, is not as easy to overcome as it would seem. Learning about different food types, understanding what works and what doesn’t, and finding substitutes for foods you’ve eaten your whole life can be a real challenge.

It was years before I realised that I was gluten intolerant. I would often feel bloated and uncomfortable after meals, and eating soon became extremely unenjoyable. It was only after I spoke to some friends who had been to their doctors with similar symptoms, that I realised I was gluten intolerant. Although not severe, I needed to make changes to my diet, and fast.
As a lover of cooking and eating, making this jump was massive. Although my case is mild and I can still eat certain quantities of gluten in my diet, I began a mission to compile a series of recipes and relevant information for anyone needing to make these changes.
Now it is no problem at all to cook gluten-free, and in fact my family are regularly unaware that many of the dishes I cook are! Having a handy book like this however would have saved me a lot of time and effort (not to mention a poorly tummy!).
I do hope you enjoy my book and that it has made life easier for you. Remember, it is not as daunting as it may seem at first, you just need a fresh perspective.
